Phulka, a quintessential Indian bread, originates from the northern regions of India, and is celebrated for its simplicity and versatility. Traditionally served with a variety of curries and vegetables, this soft, thin flatbread is cooked partially on a skillet and then finished directly over an open flame for a delightful puffed effect. Ingredients
- whole wheat flour – 2 cups / 240 g
- water – 3/4 cup / 180 ml
- salt – 1/2 tsp
- ghee or butter (optional) – for brushing
Instructions
- In a large mixing bowl, combine whole wheat flour and salt. Gradually add water to form a soft dough. Knead the dough for about 8-10 minutes until smooth.
- Divide the dough into 8 equal parts. Roll each piece into a ball and flatten slightly.
- Using a rolling pin, roll each ball into a thin circle, about 6 inches in diameter.
- Heat a skillet or tawa over medium-high heat. Place the rolled-out dough onto the skillet. Cook until bubbles form, then flip.
- Cook the other side until lightly brown spots appear, then place directly over an open flame. The Phulka should puff up.
- Remove from heat, brush with ghee or butter if desired, and serve warm.
