- wine vinegar – 1/4 cup / 60 ml
- carrots – 2, peeled and sliced
- black peppercorns – 1 tsp / 5 g
- salt – to taste
- thyme – 1 tsp / 1 g
Instructions
- Clean and prepare the partridges by removing any excess feathers and pat them dry.
- In a large, heavy pot, heat the olive oil over medium-high heat. Brown the partridges on all sides.
- Remove the birds, reduce the heat to medium, and add the onions, stirring until they become translucent.
