Ingredients
- Tasajo beef (thinly sliced) – 500 g / 1.1 lbs
- Pepitas (pumpkin seeds) – 1 cup / 130 g
- Garlic cloves (minced) – 4 cloves
- White onion (chopped) – 1 medium / 150 g
- Tomatoes (chopped) – 2 large / 400 g
- Poblano peppers (roasted and sliced) – 2 / 200 g
- Chicken broth – 4 cups / 960 ml
- Cilantro (chopped) – 1/2 cup / 30 g
- Olive oil – 2 tablespoons / 30 ml
- Salt – to taste
- Pepper – to taste
Instructions
- Toast the pepitas in a dry pan over medium heat until fragrant and slightly golden. Set aside to cool.
- In a large pot, heat olive oil over medium heat and brown the tasajo beef. Remove and set aside.
- In the same pot, add garlic and onion, sautéing until the onion is translucent.
- Add the tomatoes and cook until they begin to break down.
- Stir in the roasted poblano peppers and return the tasajo to the pot.
- Pour in the chicken broth, and bring to a simmer.
- Grind the cooled pepitas in a blender or food processor until fine, then add to the stew.
- Allow the stew to simmer for 20-25 minutes.
- Mix in the chopped cilantro and adjust seasoning with salt and pepper to taste before serving.
