Ingredients

  • Turkey pieces – 2 lbs / 900 g
  • Onion – 1 large, chopped
  • Garlic – 4 cloves, minced
  • Corn – 2 cups / 300 g, kernels
  • Carrots – 2, diced
  • Green peas – 1 cup / 150 g
  • Aji amarillo paste – 2 tablespoons
  • Chicken broth – 4 cups / 960 ml
  • Vegetable oil – 2 tablespoons
  • Salt – to taste
  • Black pepper – to taste
  • Cilantro – 1/4 cup / 15 g, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the turkey pieces and brown them on all sides, then remove and set aside.
  3. In the same pot, add the onions and garlic, cooking until soft and fragrant.
  4. Stir in the aji amarillo paste, incorporating it well with the onion mixture.
  5. Return the browned turkey to the pot, then add the chicken broth and bring to a simmer.
  6. Add the corn, carrots, and peas, stirring well.
  7. Season with salt and pepper. Simmer for 60-75 minutes, or until the turkey is tender.
  8. Garnish with fresh cilantro before serving.
