Pepián de Cuy is a traditional Peruvian dish that highlights the country’s rich culinary history and diverse ingredient palette. In contrast to more modern dishes, Pepián de Cuy brings an authentic, rustic flavor to the forefront, often enjoyed during special occasions. The dish is a harmonious stew combining cuy with a blend of traditional spices, vegetables, and corn, evoking the essence of Peru’s vibrant landscapes.

Ingredients

  • whole guinea pig (cuy), cleaned – 1 (about 1 kg)
  • yellow corn – 300 g / 1.5 cups
  • red onions – 2, chopped
  • garlic cloves – 3, minced
  • aji amarillo paste – 3 tbsp
  • cumin – 1 tsp
  • ground coriander – 1 tsp
  • fresh cilantro – a small bunch, chopped
  • chicken stock – 1 liter / 4 cups
  • potatoes – 2, cubed
  • peanut butter – 3 tbsp
  • vegetable oil – 2 tbsp
  • salt and pepper – to taste

Instructions

  1. Season the guinea pig with salt, pepper, cumin, and ground coriander.
  2. In a large pot, heat vegetable oil over medium heat and brown the guinea pig on all sides. Remove and set aside.
  3. In the same pot, sauté onions and garlic until softened.
  4. Stir in aji amarillo paste and cook for 2 minutes.
  5. Return the guinea pig to the pot, add chicken stock, and bring to a boil.
  6. Add corn, potatoes, and peanut butter, stirring well to combine.
  7. Cover and simmer for 45-60 minutes until the meat is tender.
  8. Stir in fresh cilantro before serving.
