Pelau, a delicious one-pot dish rooted in the Caribbean, is a beloved Trinidadian meal that’s as flavorful as it is comforting. This dish blends together rice, pigeon peas, and chicken, lovingly cooked in coconut milk and aromatic seasonings. Originating from Trinidad and Tobago, Pelau is a colorful reminder of the region’s rich culinary history, tracing back to African and Indian influences that were fused into this delightful meal.
Ingredients
- Chicken thighs, bone-in, skinless – 1.5 lb / 680 g
- Long grain white rice – 2 cups / 400 g
- Pigeon peas, drained and rinsed – 1 can (15 oz / 425 g)
- Coconut milk – 1 cup / 240 ml
- Brown sugar – 2 tbsp / 25 g
- Vegetable oil – 2 tbsp / 30 ml
- Onion, chopped – 1 medium / 150 g
- Garlic cloves, minced – 4 cloves
- Green bell pepper, chopped – 1 medium / 120 g
- Thyme, fresh – 4 sprigs
- Scotch bonnet pepper, whole – 1
- Scallions, chopped – 2
- Salt – 1 tbsp / 15 g
- Black pepper – 1 tsp / 5 g
- Water – 2 cups / 480 ml
Instructions
- Heat oil in a large pot over medium heat. Add sugar and cook until it caramelizes, about 2-3 minutes.
- Add chicken pieces to the pot, browning them evenly.
- Once browned, remove chicken and set aside. In the same pot, add onion, garlic, and bell pepper. Sauté until they are soft.
- Return the chicken to the pot. Stir in the pigeon peas, coconut milk, thyme, scotch bonnet, scallions, salt, and black pepper.
- Add the rice and water, stirring gently to combine all ingredients.
- Cover the pot, reduce heat to low, and simmer for 30-35 minutes until the rice is cooked and liquid is absorbed.
- Remove the thyme sprigs and scotch bonnet pepper before serving. Serve hot.
Substitutions
- Chicken thighs -> Chicken breast or tofu for a vegetarian option
- Pigeon peas -> Black-eyed peas
- Coconut milk -> Evaporated milk
