Ingredients

  • fresh white fish fillets – 4 pieces / 600 g
  • banana leaves – 4 large leaves
  • garlic – 4 cloves, minced
  • red onion – 1 large, finely chopped
  • aji amarillo paste – 2 tablespoons
  • lime juice – 2 tablespoons
  • cilantro – 1/2 cup, chopped
  • vegetable oil – 2 tablespoons
  • salt – 1 teaspoon
  • black pepper – 1/2 teaspoon

Instructions

  1. Preheat a grill to medium heat.
  2. In a bowl, mix garlic, red onion, aji amarillo paste, lime juice, cilantro, vegetable oil, salt, and black pepper.
  3. Rub the spice mixture over the fish fillets, ensuring they are well coated.
  4. Place each fish fillet on a banana leaf. Wrap the leaf around the fish, securing it with toothpicks if necessary.
  5. Grill the banana-wrapped fish for about 20 minutes, turning halfway through, until the fish is cooked and flaky.
  6. Serve hot, accompanied by boiled plantains or rice.
