Ingredients

  • all-purpose flour – 2 cups / 240 g
  • butter – 1/2 cup / 113 g, chilled and diced
  • water – 1/2 cup / 120 ml
  • salt – 1/2 tsp
  • ricotta cheese – 1 lb / 450 g
  • egg – 1 large, beaten
  • black pepper – to taste
  • parsley – 1 tbsp, chopped

Instructions

  1. In a large bowl, mix the flour and salt. Add the chilled butter and rub with your fingers until the mixture resembles breadcrumbs.
  2. Slowly add water into the flour mixture, knead it into a dough and refrigerate for 30 minutes.
  3. For the filling, mix ricotta, beaten egg, black pepper, and parsley in a bowl until smooth.
  4. Preheat your oven to 400°F (200°C).
  5. Roll the dough thinly, cut into rounds, fill with the ricotta mixture, fold, and crimp the edges to seal.
  6. Place on a baking sheet and bake for 20-25 minutes or until golden brown.
