Pasta ‘ncasciata is a traditional Sicilian dish known for its rich, hearty flavors and unique preparation method. Originating from the island of Sicily, this baked pasta dish features a harmonious blend of meat, tomato sauce, cheese, and eggplant, all baked together to create a delightful mosaic of taste and texture. Over the years, Pasta ‘ncasciata has evolved, echoing the cultural influences and abundant agricultural produce of Sicily. It’s a dish that is both comforting and celebratory, often served at family gatherings and special occasions.
Ingredients
- Rigatoni pasta – 500 g / 1.1 lbs
- Eggplants – 2 medium, sliced
- Ground beef – 300 g / 10.6 oz
- Mozzarella cheese – 250 g / 8.8 oz, cubed
- Pecorino Romano cheese – 100 g / 3.5 oz, grated
- Tomato sauce – 600 ml / 20 fl oz
- Onion – 1 large, chopped
- Garlic cloves – 2, minced
- Basil leaves – Fresh, a handful
- Olive oil – 4 tbsp
- Salt – To taste
- Black pepper – To taste
- Breadcrumbs – 50 g / 1.8 oz
Instructions
- Preheat the oven to 180°C / 350°F.
- Heat 2 tbsp of olive oil in a pan over medium heat. Add the eggplant slices and fry until golden and soft. Set aside on paper towels to drain excess oil.
- In the same pan, add another 2 tbsp of olive oil and sauté the onions and garlic until translucent.
- Add the ground beef to the pan, cook until browned, then stir in the tomato sauce. Season with salt, pepper, and some of the basil leaves. Let simmer for 15 minutes.
- Meanwhile, cook the rigatoni in salted boiling water until al dente. Drain and set aside.
- In a large mixing bowl, combine the rigatoni, tomato and meat sauce, half of the mozzarella cubes, and half of the grated Pecorino cheese.
- In a baking dish, layer half of the fried eggplants, then add the pasta mixture. Top with the remaining eggplants, mozzarella cubes, grated Pecorino, and breadcrumbs.
- Bake in the preheated oven for 25-30 minutes until the top is golden and crispy.
- Remove from oven, let it cool slightly, and serve garnished with fresh basil leaves.
