Ingredients
- pappardelle – 400 g / 14 oz
- duck legs, bone-in – 2 pieces
- olive oil – 2 tbsp
- onion, finely chopped – 1 medium / 150 g
- celery stalk, finely chopped – 1 / 65 g
- carrot, finely chopped – 1 / 70 g
- garlic, minced – 2 cloves
- dry white wine – 1 cup / 240 ml
- chicken stock – 2 cups / 480 ml
- rosemary, fresh – 1 sprig
- thyme leaves, fresh – 2 tsp
- bay leaf – 1
- heavy cream – 1/2 cup / 120 ml
- salt and pepper – to taste
- grated Parmesan cheese – 1/2 cup / 50 g
Instructions
- In a large pot, heat olive oil over medium-high heat. Add duck legs and cook until browned on all sides. Remove and set aside.
- In the same pot, add onion, celery, and carrot. Cook until softened, about 8 minutes. Add garlic and cook for 1 more minute.
- Return the duck to the pot. Pour in wine, stirring to loosen any browned bits from the bottom.
- Add chicken stock, rosemary, thyme, and bay leaf. Bring to a simmer, cover, and cook for 1.5 to 2 hours, or until the duck is tender and falling off the bone.
- Remove duck legs from the pot. Discard skin and bones, and shred the meat. Return shredded meat to the pot.
- Stir in heavy cream and season with salt and pepper. Continue to simmer uncovered for 15 minutes to thicken slightly.
- Meanwhile, cook pappardelle according to package instructions. Drain and add directly to the ragù. Toss to coat.
- Serve hot, garnished with grated Parmesan cheese.
