Paparele e bisi – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Paparele e Bisi, an exquisite springtime pasta dish from the northeastern region of Italy, particularly from Veneto, marries the fresh sweetness of peas (bisi) with the richness of handmade noodles (paparele). Steeped in centuries-old tradition, this dish captures the essence of Italian cucina povera, a celebration of simplicity and flavorful ingredients fresh from local markets. With a focus on seasonal produce, Paparele e Bisi honors the legacy of Italian nonnas who cherished quality, ensuring that each bite is filled with both nostalgia and innovation.

Ingredients

  • Fresh peas – 2 cups / 280 g
  • All-purpose flour – 2 cups / 240 g
  • Eggs – 3 large
  • Olive oil – 2 tbsp / 30 ml
  • Onion – 1 medium, finely chopped
  • Vegetable broth – 2 cups / 480 ml
  • Parmesan cheese – 1 cup / 100 g, grated
  • Salt – to taste
  • Freshly ground black pepper – to taste
  • Fresh mint leaves – a handful, roughly chopped

Instructions

  1. In a large bowl, mix the all-purpose flour with a pinch of salt. Create a well in the center and crack in the eggs. Mix thoroughly with a fork, then knead by hand until you form a smooth dough. Wrap in plastic and let rest for 30 minutes.
  2. Meanwhile, heat olive oil in a pan over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  3. Add the fresh peas and vegetable broth to the pan, season with salt and pepper, and simmer gently for 10 minutes until the peas are tender.
  4. Roll out the rested dough thinly and cut into small, short noodles resembling tagliatelle.
  5. Bring a large pot of salted water to a boil and cook the pasta until al dente, about 3-4 minutes. Drain, reserving a little pasta water.
  6. Add the cooked paparele to the pan with peas, mixing gently to combine. Stir in Parmesan cheese and add some reserved pasta water if needed to create a creamy sauce.
  7. Garnish with chopped fresh mint before serving.
