Ingredients

  • pane carasau – 8 sheets
  • tomato sauce – 2 cups / 480 ml

  • basil leaves – a handful, fresh
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Begin by heating the tomato sauce in a saucepan with a pinch of salt and black pepper. Let it simmer gently.
  2. Meanwhile, bring a large pot of water to a gentle boil. Quickly dip each sheet of pane carasau into the water just to soften, but don’t leave them too long or they will turn mushy.
  3. Place the softened pane carasau onto serving plates.
  4. Spoon the warm tomato sauce generously over the pane carasau.
  5. In a separate pan, bring water to a gentle simmer and poach the eggs for about 2-3 minutes until whites are set but yolks are still runny.
