This dish typically features well-marinated meat, typically pork shoulder, which is slow-cooked to perfection. Ingredients
- pork shoulder – 4 lbs / 1.8 kg
- olive oil – 1/4 cup / 60 ml
- garlic clove, minced – 4 cloves
- lime juice – 1/4 cup / 60 ml
- cumin – 1 tbsp / 15 g
- smoked paprika – 1 tbsp / 15 g
- fresh cilantro, chopped – 1/4 cup / 15 g
- salt – 1 tbsp / 15 g
- black pepper – 1 tsp / 5 g
- onion, sliced – 1 medium
Instructions
- In a bowl, mix olive oil, minced garlic, lime juice, cumin, smoked paprika, salt, and black pepper to create a marinade.
- Place the pork shoulder in a large dish and rub the marinade all over the meat. Cover and refrigerate for at least 4 hours, preferably overnight.
- Preheat the oven to 300°F (150°C).
- Place the marinated pork shoulder in a roasting pan and scatter sliced onion around it.
- Cover the pan with foil and bake for 3.5 to 4 hours or until the meat is tender.
- Remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30 minutes to achieve a golden-brown crust.
- Garnish with fresh cilantro before serving.
