- chicken, cut into pieces – 1 lb / 450 g

- green beans – 0.5 cup / 75 g
- lima beans – 0.5 cup / 75 g
- tomato, grated – 1 medium / 150 g
- smoked paprika – 1 tsp
- saffron threads – pinch
- water – 4 cups / 960 ml
- short-grain rice – 2 cups / 400 g
- salt – to taste
- rosemary sprig – 1
- lemon wedges – for serving
Instructions
- Heat olive oil in a large paella pan over medium heat.
- Add chicken and rabbit pieces, browning them evenly. Remove and set aside.
- Add green beans and lima beans to the pan; sauté for 2-3 minutes.
- Stir in the grated tomato and smoked paprika. Cook until tomato softens.
- Return the meats to the pan, add saffron, and pour in water. Season with salt.
- Bring to a boil; simmer for 30 minutes to develop flavors.
- Distribute short-grain rice across the pan. Do not stir after this point.
- Cook on medium-high heat until rice absorbs water and forms a thin crust at the bottom.
- Turn off the heat, cover, and let the paella rest for 5 minutes.
- Garnish with a rosemary sprig and serve with lemon wedges.
