Ingredients

  • Chicken thighs – 1 kg / 35 oz
  • Olive oil – 2 tbsp / 30 ml
  • Garlic cloves, minced – 6
  • Onion, chopped – 1 large / 150 g
  • Canned tomatoes – 400 g / 14 oz
  • Chicken broth – 1 cup / 240 ml
  • White vinegar – 2 tbsp / 30 ml
  • Sugar – 1 tbsp / 15 g
  • Bay leaves – 2
  • Salt – 1 tsp / 6 g
  • Black pepper – 1/2 tsp / 3 g
  • Fresh parsley, chopped – 2 tbsp / 8 g

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken thighs and brown on all sides. Remove and set aside.
  2. In the same pot, add minced garlic and chopped onions. Sauté until onions are translucent.
  3. Add canned tomatoes, chicken broth, white vinegar, sugar, bay leaves, salt, and black pepper. Stir to combine.
  4. Return browned chicken thighs to the pot. Cover and simmer on low heat for 30-35 minutes or until chicken is tender.
  5. Remove bay leaves, adjust seasoning if necessary, and sprinkle with fresh parsley before serving.
