  • dry white wine – 1 cup / 240 ml
  • fish stock – 2 cups / 480 ml
  • bay leaves – 2
  • thyme – 1 tsp
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Clean the ormers thoroughly and tenderize by gently pounding.
  2. Heat olive oil in a large casserole dish over medium heat. Add onion, carrots, and celery, and sauté until soft.
  3. Add the garlic and cook for another minute until fragrant.
  4. Introduce the potatoes to the dish, adding the ormers atop the vegetables.
  5. Pour in the white wine and allow it to reduce by half.
  6. Add the fish stock, bay leaves, thyme, salt, and pepper.
