Orman Kebabı, translating to ‘Forest Kebab,’ is a hearty stew originating from the lush and diverse forests of Turkey. This traditional dish combines tender chunks of meat with a medley of fresh vegetables, utilizing the bounty of nature to create a meal that is both nourishing and flavorful. Ingredients
- Beef cubes – 500 g / 1.1 lbs
- Olive oil – 3 tbsp / 45 ml
- Onion, diced – 1 large / 150 g
- Garlic cloves, minced – 3 cloves / 15 g
- Carrot, sliced – 1 large / 100 g
- Potatoes, diced – 2 medium / 300 g
- Peas – 1 cup / 150 g
- Tomato paste – 2 tbsp / 30 g
- Bay leaves – 2 leaves
- Paprika – 1 tsp / 2 g
- Salt – 1 tsp / 5 g
- Black pepper – 1/2 tsp / 1 g
- Water – 3 cups / 720 ml
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the beef cubes, searing until they are browned on all sides. Remove and set aside.
- In the same pot, add onions and garlic, sauté until softened and fragrant.
- Stir in the carrot, potatoes, and peas, cooking for another 5 minutes.
- Add the tomato paste, bay leaves, paprika, salt, and pepper, mixing thoroughly.
- Return the beef to the pot, pour in the water, and bring to a simmer.
- Cover and cook on low heat for 1.5 to 2 hours, or until meat is tender and the flavors are well developed.
- Adjust seasoning if necessary, and serve hot.
