- fresh parsley – 2 tablespoons, chopped
- salt – 1 teaspoon
- black pepper – 1/2 teaspoon
- all-purpose flour – 1/2 cup / 60 g
- eggs – 2, beaten
- olive oil – 1/4 cup / 60 ml
Instructions
- Preheat the oven to 375°F (190°C).
- In a shallow dish, combine the chopped hazelnuts, panko breadcrumbs, lemon zest, parsley, salt, and pepper.
- Dredge the trout fillets lightly in flour, shaking off the excess.
