  • trout fillets – 4 fillets, around 6 oz each

  • fresh parsley – 2 tablespoons, chopped
  • salt – 1 teaspoon
  • black pepper – 1/2 teaspoon
  • all-purpose flour – 1/2 cup / 60 g
  • eggs – 2, beaten
  • olive oil – 1/4 cup / 60 ml

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, combine the chopped hazelnuts, panko breadcrumbs, lemon zest, parsley, salt, and pepper.
