Čorbast pasulj, often known as Serbian bean stew, is a beloved traditional dish deeply rooted in Serbian culinary heritage. A warm and comforting staple in many Serbian households, this hearty bean stew is renowned for its rich, smoky flavors and soul-soothing warmth, perfect for chilly days. Typically made with white beans, vegetables, and a variety of meats, it embodies the rustic and wholesome cooking of the Balkan region. Ingredients
- Dried white beans – 2 cups / 400 g
- Smoked pork ribs – 1 lb / 450 g
- Onions, chopped – 2 medium / 200 g
- Carrots, sliced – 2 large / 200 g
- Garlic cloves, minced – 4 cloves
- Paprika – 2 tbsp / 30 g
- Tomato paste – 2 tbsp / 30 g
- Bay leaves – 2 leaves
- Vegetable oil – 2 tbsp / 30 ml
- Salt – to taste
- Black pepper – to taste
- Water – 8 cups / 2 L
Instructions
- Rinse and soak the beans in cold water overnight.
- In a large pot, heat the oil over medium heat and sauté the onions until they are translucent.
- Add the garlic and continue to sauté for another minute.
- Stir in the smoked pork ribs, carrots, and paprika, cooking for an additional 5 minutes.
- Drain and rinse the soaked beans and add them to the pot along with the tomato paste and bay leaves.
- Pour in the water, bring it to a boil, then reduce to a simmer.
- Cover and cook for about 1.5 – 2 hours, or until the beans are tender, stirring occasionally.
- Remove the pork ribs, shred the meat, and return it to the stew. Season with salt and black pepper to taste.

- Dried white beans -> Canned white beans, drained and rinsed
