Onmyeon is a traditional Korean soup hailing from the rich culinary tapestry of South Korea. Ingredients

  • beef brisket – 300 g / 10.5 oz
  • wheat flour noodles – 200 g / 7 oz
  • onion – 1 medium / 150 g
  • garlic cloves – 3 cloves / 15 g
  • green onion – 2 stalks / 30 g
  • soy sauce – 2 tbsp / 30 ml
  • sesame oil – 1 tbsp / 15 ml
  • salt – to taste
  • water – 6 cups / 1.4 L

Instructions

  1. In a large pot, add beef brisket, onion, garlic, and water. Bring to a boil over high heat.
  2. Reduce heat to low and simmer for 1.5 hours, skimming off any foam to keep the broth clear.
  3. Remove beef and let it cool slightly. Slice beef into thin strips.
  4. Strain the broth to remove solids, then return to the pot and season with soy sauce and salt.
  5. Cook wheat flour noodles according to package instructions, then drain.
  6. Serve noodles in bowls with beef slices on top, and pour hot broth over them.
  7. Garnish with chopped green onion and a drizzle of sesame oil.
