Ingredients
- beef chuck, cubed – 2 lbs / 900 g
- water – 8 cups / 1.9 liters
- yucca, peeled and cut into chunks – 1 lb / 450 g
- potatoes, peeled and cut into chunks – 2 large
- carrots, sliced – 3 medium
- corn on the cob, cut into pieces – 2 ears
- green plantains, sliced – 2
- cilantro, chopped – 1/2 cup / 30 g
- soup bones – 1 lb / 450 g
- garlic cloves, minced – 4
- onion, chopped – 1 large
- red bell pepper, chopped – 1
- salt – 2 tsp / 12 g
- black pepper – 1 tsp / 5 g
- ground cumin – 1 tsp / 5 g
Instructions
- In a large pot, bring 8 cups of water to a boil. Add soup bones and beef chuck, reduce the heat, and simmer for 1 hour, skimming off any foam.
- Add yucca, potatoes, and carrots. Continue to simmer for another 20 minutes.
- Mix in corn, plantains, onion, red bell pepper, garlic, cilantro, salt, black pepper, and cumin.
- Simmer everything together for an additional 30-40 minutes until all vegetables and meat are tender.
- Remove soup bones, adjust seasoning, and serve in bowls, garnished with extra cilantro if desired.
