Ingredients
- boiled potatoes – 2 medium / approximately 400 g
- cucumber – 2 medium / approximately 300 g
- radishes – 5-6 / approximately 100 g
- green onions – 4-5 stalks
- dill – a small bunch
- hard-boiled eggs – 3
- cooked ham or bologna – 200 g
- kvass – 1 liter / 4 cups
- sour cream – 200 ml / 1 cup
- salt – to taste
- black pepper – to taste
Instructions
- Chop boiled potatoes, cucumber, radishes, green onions, dill, hard-boiled eggs, and ham into small, even cubes.
- In a large bowl, combine all the chopped ingredients.
- Season the mixture with salt and black pepper.
- Pour the kvass into the bowl with chopped ingredients and stir gently to mix.
- Serve the soup chilled, garnished with a dollop of sour cream on top.
