Ingredients

  • boiled potatoes – 2 medium / approximately 400 g
  • cucumber – 2 medium / approximately 300 g
  • radishes – 5-6 / approximately 100 g
  • green onions – 4-5 stalks
  • dill – a small bunch
  • hard-boiled eggs – 3
  • cooked ham or bologna – 200 g
  • kvass – 1 liter / 4 cups
  • sour cream – 200 ml / 1 cup
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Chop boiled potatoes, cucumber, radishes, green onions, dill, hard-boiled eggs, and ham into small, even cubes.
  2. In a large bowl, combine all the chopped ingredients.
  3. Season the mixture with salt and black pepper.
  4. Pour the kvass into the bowl with chopped ingredients and stir gently to mix.
  5. Serve the soup chilled, garnished with a dollop of sour cream on top.

Substitutions

  • kvass -> unsweetened kefir or yogurt mixed with sparkling water
  • ham or bologna -> cooked chicken or beef
