Ingredients
- Fresh porcini mushrooms – 400 g / 14 oz
- Onion – 1 medium / 150 g
- Garlic cloves – 3 cloves
- Olive oil – 2 tbsp
- Butter – 30 g / 2 tbsp
- Potato – 1 large / 200 g
- Vegetable stock – 1 liter / 4 cups
- Heavy cream – 100 ml / 0.4 cup
- Salt – to taste
- Black pepper – to taste
- Parsley – a handful
Instructions
- Clean the porcini mushrooms with a damp cloth and slice them thinly.
- Chop the onion and garlic finely.
- In a large pot, heat olive oil and butter over medium heat.
- Add chopped onion and garlic; sauté until translucent.
- Add sliced mushrooms and sauté until golden brown.
- Peel and chop the potato, then add it to the pot.
- Pour in the vegetable stock and bring to a boil.
- Reduce heat and simmer for 20 minutes until potatoes are tender.
- Blend the soup until smooth using an immersion blender.
- Stir in heavy cream, season with salt and pepper.
- Garnish with chopped parsley before serving.
