Ingredients
- Short-grain white rice – 2 cups / 400 g
- Water – 2.5 cups / 600 ml
- Sesame oil – 2 tablespoons
Instructions
- Rinse the rice thoroughly under cold water until the water runs clear.
- Combine the rice and water in a heavy-bottomed pot, and let it soak for 30 minutes.
- Bring the rice to a boil over medium heat, then reduce to low and cover with a lid.
- Cook for 15 minutes until the water is absorbed.
- Drizzle sesame oil over the rice, and use a spatula to press down evenly.
- Increase the heat to medium-high and cook for another 8-10 minutes until the bottom forms a crispy layer.
- Carefully loosen and remove the crispy rice (nurungji) from the pot.
- Serve as is or break into pieces and use in soups or porridges.
