Ingredients

  • Glutinous rice flour – 2 cups / 240 g
  • Coconut milk – 1 1/4 cups / 300 ml
  • Sugar – 1/2 cup / 100 g
  • Desiccated coconut – 1/2 cup / 50 g
  • Red bean paste – 1/2 cup / 120 g
  • Fresh mango, diced – 1/2 cup / 100 g

Instructions

  1. Mix the glutinous rice flour and sugar together in a large bowl.
  2. Gradually add coconut milk to the flour mixture while stirring continuously until a smooth batter forms.
  3. Prepare a steamer and bring the water to a boil. Pour the batter into a heatproof dish and steam for 25 minutes.
  4. Remove the steamed dough and let it cool slightly. Then knead it on a surface dusted with glutinous rice flour until smooth.
  5. Divide the dough into small portions. Flatten each piece and place a spoonful of red bean paste and some diced mango in the center.
  6. Gather the edges to enclose the filling, forming a ball. Roll the ball in desiccated coconut to coat.
  7. Repeat with the remaining dough and fillings. Serve at room temperature or chilled.

  • Red bean paste -> Lotus seed paste or sweetened mung bean paste
