Ingredients

  • chicken broth – 6 cups / 1440 ml
  • egg noodles – 150 g
  • carrots, diced – 2 medium / 150 g
  • celery, diced – 2 stalks / 100 g
  • onion, chopped – 1 large / 150 g
  • chicken breast, cooked and shredded – 200 g
  • parsley, chopped – 2 tablespoons
  • butter – 2 tablespoons / 28 g
  • salt – to taste
  • pepper – to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and sauté until translucent.
  2. Add the carrots and celery to the pot and cook for another 5 minutes until they begin to soften.
  3. Pour in the chicken broth and bring to a simmer.
  4. Once simmering, add the egg noodles and cook until they are tender, about 8-10 minutes.
  5. Stir in the shredded chicken and heat through.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped parsley before serving.
