This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Nasi Timbel is a traditional Indonesian rice dish that hails from West Java. Known for its simplicity and robust flavors, this dish features rice wrapped in banana leaves and steamed, infusing it with a subtle aroma and making it incredibly tender. Typically accompanied by an array of Sundanese accompaniments such as fried chicken, tempeh, tofu, sambal, and fresh vegetables, Nasi Timbel captures the heart of Sundanese culinary heritage. This dish’s origins lie in the practical need of rice farmers to carry food with them, wrapped conveniently in banana leaves.

Ingredients

  • Rice – 2 cups / 480 g
  • Banana leaves – 4 large leaves, softened
  • Water – 3 cups / 720 ml
  • Fried chicken – 4 pieces
  • Tempeh – 200 g, sliced and fried
  • Tofu – 200 g, sliced and fried
  • Sambal – 1/2 cup / 120 g
  • Fresh vegetables – 1 cup / 150 g (cucumber, lettuce, etc.)

Instructions

  1. Rinse the rice thoroughly under cold water until the water runs clear.
  2. In a pot, combine the rice with 3 cups of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer until the water is absorbed, about 15 minutes.
  3. Prepare the banana leaves by passing them over an open flame to soften them. This makes them more pliable and less likely to tear.
  4. Divide the cooked rice into four equal portions. Place each portion onto a banana leaf, roll tightly, and secure both ends by folding the leaf over.
  5. Steam the wrapped rice parcels for an additional 10-15 minutes to infuse the banana leaf flavor.
  6. Serve each banana leaf-wrapped packet of rice with fried chicken, fried tempeh, fried tofu, sambal, and fresh vegetables on the side.

Substitutions

  • Banana leaves -> Parchment paper if banana leaves are unavailable
  • Fried chicken -> Grilled or roasted chicken
  • Sambal -> Hot sauce or sriracha

Enhancements in the Next Evolution

  • Use pandan leaves alongside banana leaves for additional fragrance.
  • Add coconut milk to the rice for a richer flavor.
  • Include fresh herbs like lemongrass and kaffir lime leaves in the water to steam the rice.
