Ingredients

  • steamed jasmine rice – 2 cups / 370 g
  • spinach – 1 cup / 30 g, blanched
  • bean sprouts – 1 cup / 100 g, blanched
  • green beans – 1 cup / 150 g, cut into 1-inch pieces and blanched
  • cucumber – 1 cup / 130 g, sliced
  • peanuts – 1 cup / 150 g, roasted
  • water – 1/2 cup / 120 ml
  • garlic – 2 cloves, minced
  • bird’s eye chilies – 2, sliced
  • tamarind paste – 1 tsp / 5 g
  • lime juice – 1 tbsp / 15 ml
  • palm sugar – 2 tbsp / 30 g
  • salt – 1/2 tsp / 3 g
  • shrimp paste – 1/2 tsp / 2 g, roasted

Instructions

  1. Prepare steamed jasmine rice and set aside.
  2. Blanch spinach, bean sprouts, and green beans separately in boiling water for 2-3 minutes and cool in ice water to preserve color.
  3. Using a mortar and pestle or blender, grind roasted peanuts, garlic, chilies, tamarind paste, lime juice, palm sugar, salt, and shrimp paste together until smooth.
  4. Gradually add water to the peanut mixture to achieve a sauce-like consistency.
  5. Arrange rice on plates and top with blanched vegetables and sliced cucumber.
  6. Generously drizzle peanut sauce over the vegetables.
  7. Serve immediately as a wholesome and flavorful meal.
