Ingredients
- Jasmine rice – 2 cups / 390 g
- Coconut milk – 1 cup / 240 ml
- Water – 1 cup / 240 ml
- Turmeric powder – 1 tsp / 5 g
- Lemongrass stalk – 1, bruised
- Salt – 1 tsp / 5 g
- Cilantro, chopped – 2 tbsp / 10 g
- Shallots, sliced – 3 / 90 g
- Garlic cloves, minced – 2 / 10 g
- Red chili paste – 3 tbsp / 45 g
- Sugar – 1 tbsp / 15 g
- Vegetable oil – 2 tbsp / 30 ml
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine rinsed rice, coconut milk, water, turmeric powder, bruised lemongrass, and salt. Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes or until the liquid is absorbed and the rice is tender.
- In a separate pan, heat oil over medium heat. Add sliced shallots and minced garlic, sauté until fragrant.
- Stir in the red chili paste and sugar, cooking for another 3-5 minutes until the paste thickens slightly.
- Remove lemongrass from the rice, then gently fluff with a fork.
- Serve the turmeric-infused rice topped with the sambal mixture and garnish with chopped cilantro.
