Nasi Jaha is a traditional rice dish hailing from the rich cultural lands of North Sulawesi, Indonesia. Ingredients

  • glutinous rice – 2 cups / 400 g
  • thick coconut milk – 2 cups / 480 ml
  • lemongrass – 2 stalks, bruised
  • bay leaves – 4 leaves
  • galangal – 1-inch piece, sliced
  • salt – 1 tsp / 5 g
  • bamboo stems – as needed for stuffing

Instructions

  1. Wash the glutinous rice thoroughly and soak in water for at least 3 hours or overnight for better texture.
  2. Drain the rice and mix with coconut milk, lemongrass, bay leaves, galangal, and salt. Stir well to combine.
  3. Stuff the mixture into bamboo stems, leaving some space at the ends for expansion.
  4. Seal the bamboo ends with banana leaves or foil.
  5. Roast the bamboo over an open flame or a grill, rotating occasionally, for about 1 to 1.5 hours until the rice is fully cooked and infused with the smoky aroma.
  6. Allow it to cool slightly before slicing the bamboo open and serving the rice slices hot.
