Ingredients
- puff pastry sheets – 3 sheets / 750 g
- whole milk – 2 cups / 480 ml
- sugar – 1/2 cup / 100 g
- cornstarch – 1/4 cup / 30 g
- egg yolks – 4 large
- vanilla extract – 1 teaspoon / 5 ml
- raspberry jam – 1/2 cup / 120 g
- confectioners’ sugar – 1 cup / 120 g
- water – 2 tablespoons / 30 ml
Instructions
- Preheat your oven to 400°F (200°C).
- Lay the puff pastry sheets flat and prick all over with a fork. Bake for 15-20 minutes or until golden brown. Allow them to cool.
- In a saucepan, heat milk over medium heat until simmering.
- Whisk together sugar, cornstarch, and egg yolks in a bowl. Gradually pour the hot milk over the mixture while continuously whisking.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened. Add vanilla extract and let cool.
- Spread raspberry jam on two of the baked puff pastry layers. Top each with a portion of the cooled custard, then stack them.
- Place the third pastry on top as a lid. Mix confectioners’ sugar and water to create a smooth icing. Spread over the top layer and let set before slicing.
