Ingredients
- polenta or cornmeal – 1 cup / 160 g
- milk – 2 cups / 480 ml
- water – 2 cups / 480 ml
- unsalted butter – 1/4 cup / 60 g
- eggs – 2 large
- sour cream – 1/2 cup / 120 g
- sugar – 2 tbsp / 25 g
- salt – 1 tsp / 5 g
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, bring the milk and water to a boil over medium heat.
- Gradually whisk in the polenta, reducing the heat to low, and stir continuously until thickened and smooth, about 5-7 minutes.
- Remove the saucepan from the heat and stir in the butter until melted.
- In a separate bowl, beat the eggs with sour cream, sugar, and salt.
- Add the egg mixture to the polenta and mix well.
- Pour the mixture into a greased casserole dish and smooth the top.
- Bake in the preheated oven for 25-30 minutes until set and slightly golden on top.
- Let it cool slightly before serving.
