Mutton Rara, a luxuriant delicacy rooted in the culinary traditions of North India, combines the tender goodness of mutton with rich, hearty spices. Ingredients

  • Mutton (bone-in pieces) – 1 lb / 450 g
  • Minced mutton – 1/2 lb / 225 g
  • Onions, finely chopped – 2 large / 300 g
  • Tomatoes, pureed – 3 medium / 450 g
  • Ginger-garlic paste – 2 tbsp / 30 g
  • Ghee (clarified butter) – 3 tbsp / 45 ml
  • Yogurt – 1 cup / 240 ml
  • Red chili powder – 1 tsp / 5 g
  • Turmeric powder – 1/2 tsp / 2.5 g
  • Coriander powder – 1 tbsp / 15 g
  • Cumin powder – 1 tsp / 5 g
  • Garam masala – 1 tsp / 5 g
  • Salt – to taste
  • Fresh coriander leaves, chopped – 1/4 cup / 15 g
  • Water – 2 cups / 480 ml

Instructions

  1. Heat ghee in a large pan over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and fry for 2 minutes.
  4. Add minced mutton, sauté until browned.
  5. Mix in pureed tomatoes and cook until oil separates.
  6. Add yogurt, mutton pieces, and spices (red chili, turmeric, coriander, cumin, garam masala) to the pan.
  7. Stir well and season with salt.
  8. Pour in water, cover, and simmer on low heat until mutton is tender, approximately 40-45 minutes.
  9. Garnish with chopped coriander leaves before serving.

  • Yogurt -> Cream
