Ingredients

  • olive oil – 2 tablespoons
  • onion, finely chopped – 1 large
  • garlic cloves, minced – 2 cloves
  • red bell pepper, chopped – 1 medium
  • tomato paste – 2 tablespoons
  • short-grain rice – 1 cup / 200 g
  • white wine – 1/2 cup / 120 ml
  • fish stock or water – 2 cups / 480 ml
  • fresh mussels, cleaned and debearded – 1 pound / 450 g
  • paprika – 1 teaspoon
  • ground cumin – 1/2 teaspoon
  • salt – to taste
  • black pepper – to taste
  • fresh parsley, chopped – for garnish
  • lemon wedges – to serve

Instructions

  1. Heat olive oil in a large pan over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Stir in the red bell pepper and tomato paste, cooking for another 2 minutes until the paste darkens slightly.
  3. Add the rice, stirring to coat with the aromatics.
  4. Pour in the white wine, allowing it to simmer until mostly absorbed.
  5. Add the fish stock, paprika, cumin, salt, and black pepper. Stir well and bring to a simmer.
  6. Cover the pan and reduce the heat to low. Cook for 10 minutes.
  7. Place the mussels on top of the rice and cover again. Cook for an additional 10 minutes, or until the mussels have opened and rice is tender.
  8. Garnish with fresh parsley and serve with lemon wedges.
