Ingredients
- fresh mussels – 2 lbs / 900 g
- yellow potatoes – 1 lb / 450 g, diced
- onion – 1 large, finely chopped
- garlic – 4 cloves, minced
- aji amarillo paste – 2 tablespoons
- vegetable stock – 4 cups / 960 ml
- fresh cilantro – 1/2 cup / 30 g, chopped
- lemon juice – 2 tablespoons
- vegetable oil – 3 tablespoons
- salt – to taste
- pepper – to taste
Instructions
- Rinse and scrub the mussels, discarding any that do not close when tapped.
- In a large pot, heat vegetable oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
- Stir in the aji amarillo paste and cook for 2 more minutes, allowing the flavors to meld.
- Add diced potatoes and vegetable stock. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.
- Gently add the mussels to the pot, cover, and cook until the mussels open, approximately 5-7 minutes.
- Stir in fresh cilantro and lemon juice, season with salt and pepper to taste.
- Serve the stew hot, garnished with additional cilantro if desired.
