Mubattan Kusha is a beloved Libyan casserole that brings together layers of thinly-sliced potatoes, well-seasoned meat, and eggs baked to a golden perfection. Ingredients

  • Potatoes – 4 large / 800 g
  • Ground beef or lamb – 500 g / 1 lb
  • Onion, finely chopped – 1 large / 150 g
  • Eggs – 3 large
  • Fresh parsley, chopped – 1/4 cup / 15 g
  • Garlic cloves, minced – 3 cloves
  • Ground cumin – 1 tsp / 2 g
  • Ground coriander – 1 tsp / 2 g
  • Salt – 1 tsp / 5 g
  • Black pepper – 1/2 tsp / 1 g
  • Vegetable oil – 2 tbsp / 30 ml
  • Butter – 2 tbsp / 30 g

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel and thinly slice the potatoes. Set aside.
  3. In a large skillet, heat vegetable oil over medium heat. Add onions and sauté until translucent.
  4. Add garlic, ground beef or lamb, cumin, coriander, salt, and pepper. Cook until the meat is browned and cooked through.
  5. In a bowl, beat the eggs and season lightly with salt and pepper.
  6. Grease a casserole dish with butter. Layer half of the potatoes on the bottom.
  7. Spread the cooked meat mixture over the potato layer.
  8. Sprinkle chopped parsley over the meat.
  9. Layer the remaining potatoes on top. Pour the beaten eggs over everything, ensuring it’s evenly distributed.
  10. Dot the top with small pieces of butter.
  11. Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden.
  12. Let rest for 10 minutes before serving warm.
