Ingredients

  • chicken, cut into pieces – 3 lbs / 1.36 kg
  • sliced onions – 2 large
  • garlic, minced – 4 cloves
  • red palm oil – 1/2 cup / 120 ml
  • ripe tomatoes, chopped – 4 medium
  • okra, sliced – 200 g / 7 oz
  • bay leaf – 1
  • ground chili pepper – 1 tsp
  • coarse sea salt – 1 tbsp
  • water – 2 cups / 480 ml

Instructions

  1. Season the chicken pieces with salt and set aside.
  2. In a large pot, heat the red palm oil over medium heat.
  3. Add the onions and garlic, sautéing until the onions are translucent.
  4. Add the tomatoes and cook until soft and integrated into the mix.
  5. Introduce the chicken pieces, browning them slightly on both sides.
  6. Add the bay leaf, chili pepper, and water. Bring to a simmer.
  7. Cook the chicken gently for about 30 minutes, stirring occasionally.
  8. Add the okra, mix well, and continue to simmer for another 15 minutes until the chicken is tender.
  9. Taste and adjust seasoning if necessary before serving.
