Ingredients
- pork shoulder – 500 g / 1.1 lbs
- garlic cloves – 10 cloves, finely minced
- soy sauce – 3 tbsp
- oyster sauce – 2 tbsp

- sugar – 1 tsp
- vegetable oil – for frying
- cilantro – for garnish
- lime – 1, cut into wedges
Instructions
- Cut the pork shoulder into bite-sized pieces.
- In a mixing bowl, combine the minced garlic, soy sauce, oyster sauce, white pepper, and sugar. Mix well.
- Add the pork pieces to the marinade. Let it marinate for at least 30 minutes, preferably 1 hour for better flavor infusion.
- Heat vegetable oil in a frypan over medium-high heat until shimmering.
- Fry the marinated pork pieces in batches until golden brown and crispy, approximately 5-7 minutes each batch.
- Remove the pork from the oil and drain on paper towels.
- Garnish with cilantro and serve with lime wedges and steamed rice.
