Morcon is a cherished Filipino meat dish that traditionally graces the tables during festive occasions and family gatherings. Ingredients
- Beef flank steak – 2 lbs / 900 g
- Soy sauce – 1/2 cup / 120 ml
- Calamansi juice (or lemon) – 1/4 cup / 60 ml
- Ground black pepper – 1 tsp / 5 g
- Pork sausage – 2 pcs, sliced into strips
- Hard-boiled eggs – 3 pcs, quartered
- Cheddar cheese – 1/2 cup, cut into strips
- Carrots – 2 pcs, sliced into strips
- Pickles – 1/2 cup, sliced into strips
- Flour – 1/2 cup / 60 g
- Cooking oil – 1/4 cup / 60 ml
- Water – 3 cups / 720 ml
- Tomato sauce – 1 cup / 240 ml
- Bay leaves – 3 pcs
Instructions
- Tenderize the beef flank steak by pounding it with a meat mallet.
- In a bowl, combine soy sauce, calamansi juice, and black pepper. Marinate the beef in this mixture for at least 1 hour in the refrigerator.
- Lay the beef flat on a clean surface and arrange sausage, eggs, cheese, carrots, and pickles along the center.
- Roll the beef tightly and secure with kitchen twine.
- Dredge the beef roll in flour, shaking off excess.
- Heat cooking oil in a large pan over medium heat. Brown the beef roll on all sides.
- In a pot, combine water, tomato sauce, and bay leaves. Add the beef roll and simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove twine, slice the beef roll crosswise, and serve with sauce.
