Mojo is an iconic sauce hailing from Spain’s Canary Islands. Known for its robust and vibrant flavors, Mojo is traditionally made using a combination of garlic, olive oil, vinegar, and peppers. Depending on the color, red or green, the sauce pairs with a variety of dishes like papas arrugadas (wrinkled potatoes), grilled meats, or roasted vegetables. This sauce embodies Spain’s rich culinary history with its unique blend of ingredients that elevate any dish it accompanies.
Ingredients
- Red Peppers – 2 medium / 300 g
- Garlic – 4 cloves / 20 g
- Extra Virgin Olive Oil – 1/2 cup / 120 ml
- Red Wine Vinegar – 1/4 cup / 60 ml
- Paprika – 1 tbsp / 15 g
- Cumin – 1 tsp / 5 g
- Sea Salt – 1 tsp / 5 g
- Black Pepper – 1/2 tsp / 2.5 g
- Cilantro – 1/4 cup / 15 g
Instructions
- Roast the red peppers over an open flame or in an oven at 220°C (430°F) until charred. Place them in a covered bowl to steam for 10 minutes, then peel off the skins and remove seeds.
- In a blender, combine the peeled peppers, garlic, olive oil, red wine vinegar, paprika, cumin, sea salt, black pepper, and cilantro.
- Blend on high speed until smooth and emulsified.
- Taste and adjust seasoning as needed.
