Münchner Schnitzel is a beloved Bavarian variation of the traditional schnitzel, known for its tantalizing combination of tender meat, creamy mustard, and crispy breading. This dish originates from Munich, Germany, and reflects its culinary diversity by adding Bavarian mustard and horseradish to the breading process, creating a delightful twist that distinguishes it from the Wiener Schnitzel. It brings the spirit of Bavarian cuisine into every bite, offering both comfort and sophistication.

Ingredients

  • Pork cutlets – 4 pieces, 150 g each
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Flour – 1 cup / 130 g
  • Eggs – 2, beaten
  • Bavarian mustard – 1/4 cup / 60 g
  • Prepared horseradish – 2 tbsp / 30 g
  • Breadcrumbs – 2 cups / 230 g
  • Butter – 4 tbsp / 60 g
  • Vegetable oil – 1/4 cup / 60 ml

Instructions

  1. Pound the pork cutlets to about 1/4 inch thickness. Season both sides with salt and black pepper.
  2. Set up a breading station with three dishes: one with flour, another with beaten eggs mixed with Bavarian mustard and horseradish, and the last with breadcrumbs.
  3. Dredge each cutlet in flour, shaking off excess, then dip into the egg mixture ensuring a full coat, and finally, press into breadcrumbs until well covered.
  4. In a large skillet, heat butter and oil over medium-high heat.
  5. Fry the cutlets for 3-4 minutes on each side until golden brown and cooked through.
  6. Transfer to a wire rack to drain excess oil.

Substitutions

  • Pork cutlets -> Chicken breast or veal cutlets

Enhancements in the Next Evolution
