Ingredients
- olive oil – 2 tablespoons
- onion, chopped – 1 large
- carrots, sliced – 2 medium
- garlic cloves, minced – 3
- chicken breast, cubed – 300 g / 10.5 oz
- fresh peas – 500 g / 1.1 lbs
- vegetable broth – 2 cups / 480 ml
- tomato paste – 2 tablespoons
- dill, chopped – 2 tablespoons
- salt – to taste
- pepper – to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and cook until translucent.
- Stir in the sliced carrots and garlic, cooking for another 2 minutes.
- Add cubed chicken, cooking until lightly browned on all sides.
- Mix in the fresh peas, followed by the vegetable broth and tomato paste.
- Bring the stew to a boil, then reduce heat to a simmer, cover, and cook for 20-25 minutes, until peas are tender.
- Stir in chopped dill, season with salt and pepper to taste, and serve warm.
