Ingredients
- Dried chickpeas – 1 cup / 200 g
- Olive oil – 2 tbsp / 30 ml
- Yellow onion, chopped – 1 medium / 150 g
- Garlic cloves, minced – 3 large
- Carrot, diced – 1 large / 100 g
- Celery stalk, diced – 1 large / 75 g
- Bay leaf – 1
- Rosemary, fresh – 1 sprig
- Crushed tomatoes – 1 cup / 240 ml
- Vegetable stock – 4 cups / 960 ml
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Pecorino Romano cheese, grated – 1/4 cup / 25 g
Instructions
- Soak the chickpeas overnight in plenty of water. Drain and rinse them the next day.
- In a large pot, heat olive oil over medium heat. Add onions, garlic, carrot, and celery, sautéing until the vegetables are soft and fragrant, about 10 minutes.
- Stir in the soaked chickpeas, bay leaf, and rosemary, followed by the crushed tomatoes. Cook for another 5 minutes, allowing the flavors to meld.
- Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 1 to 1.5 hours, or until the chickpeas are tender.
- Season with salt and pepper. Remove the bay leaf and rosemary sprig.
- Serve the soup hot, garnished with grated Pecorino Romano cheese.
