Ingredients
- olive oil – 2 tbsp
- onion, finely chopped – 1 medium / 150 g
- garlic cloves, minced – 2 cloves
- carrots, diced – 2 medium / 200 g
- celery stalks, diced – 2 stalks / 100 g
- canned tomatoes, crushed – 1 can / 400 g
- vegetable broth – 6 cups / 1.5 liters
- cabbage, shredded – 1 small / 300 g
- cannellini beans, drained – 2 cans / 800 g
- barley – 1 cup / 200 g
- thyme, dried – 1 tsp
- bay leaf – 1
- salt and pepper – to taste
- parsley, chopped – 1/4 cup / 15 g
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté until onion becomes translucent, about 5 minutes.
- Add carrots and celery and cook for another 5 minutes until they begin to soften.
- Stir in crushed tomatoes, vegetable broth, shredded cabbage, cannellini beans, and barley.
- Add thyme and bay leaf, and season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for about 45 minutes, or until barley is cooked through.
- Remove bay leaf before serving. Garnish with chopped parsley.
