Ingredients

  • udon noodles – 400 g
  • chicken breast – 250 g
  • shiitake mushrooms – 100 g
  • carrot – 1 medium, julienned
  • soy sauce – 3 tbsp
  • mirin – 2 tbsp
  • dashi stock – 1 liter
  • green onion – 2 stalks, sliced
  • ginger – 1 inch, grated
  • sesame oil – 1 tbsp
  • spinach – 100 g

Instructions

  1. Boil udon noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat sesame oil over medium heat. Add grated ginger and cook until fragrant.
