Ingredients

  • olive oil – 2 tbsp / 30 ml
  • yellow onion, diced – 1 large / 150 g
  • carrot, sliced – 2 medium / 120 g
  • celery stalk, sliced – 2 stalks / 100 g
  • zucchini, diced – 1 medium / 200 g
  • tomatoes, diced – 2 large / 300 g
  • vegetable broth – 6 cups / 1.5 L
  • canned cannellini beans, drained and rinsed – 1 can / 400 g
  • dried ditalini pasta – 1 cup / 180 g
  • fresh basil leaves, chopped – 1/4 cup / 10 g
  • salt – to taste
  • black pepper – to taste
  • Parmesan cheese, grated – 1/2 cup / 50 g

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until the vegetables are tender.
  2. Add the zucchini and tomatoes to the pot. Stir and cook for another 3 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 20 minutes.
  4. Add the cannellini beans and ditalini pasta to the soup. Cook until the pasta is al dente, about 8-10 minutes.
  5. Stir in the chopped basil leaves. Season with salt and black pepper to taste.
  6. Serve hot, garnished with grated Parmesan cheese.
