Mifa Fish, also known as Samak Mifa, is a delectable seafood dish originating from the coastal regions of Saudi Arabia. This dish reflects the rich maritime traditions of the Arabian Peninsula, characterized by its aromatic spices and fresh ingredients. Ingredients

  • whole fish (such as sea bass or snapper) – 1.5 kg / 3 lbs
  • lemon juice – 1/4 cup / 60 ml
  • olive oil – 1/4 cup / 60 ml
  • garlic, minced – 4 cloves
  • ground cumin – 1 tsp / 5 g
  • ground coriander – 1 tsp / 5 g
  • ground turmeric – 1/2 tsp / 2.5 g
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2.5 g
  • cilantro, chopped – 1/4 cup / 15 g
  • green chili, chopped – 1
  • tomato, sliced – 1
  • onion, sliced – 1

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Clean and score the whole fish on both sides.
  3. In a bowl, mix lemon juice, olive oil, minced garlic, cumin, coriander, turmeric, salt, and black pepper to form a marinade.
  4. Rub the marinade all over the fish, ensuring it’s well coated inside the scores and cavity.
  5. Stuff the fish cavity with cilantro, green chili, sliced tomato, and onion.
  6. Place the fish on a baking tray and cover with foil.
  7. Bake in the preheated oven for 25-30 minutes or until the fish is cooked through and flaky.
  8. Remove the foil for the last 5 minutes of baking to allow the top to get slightly crispy.
