Ingredients

  • fresh mussels – 1 kg / 2.2 lbs
  • all-purpose flour – 1 cup / 120 g
  • cornflour – 1/2 cup / 60 g
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • water – 1/2 cup / 120 ml
  • vegetable oil – for frying
  • lemon – 1, cut into wedges
  • tarator sauce (optional) – for serving

Instructions

  1. Clean and debeard the mussels thoroughly under cold water.
  2. Whisk together the flour, cornflour, salt, black pepper, and water to create a smooth batter.
  3. Heat the vegetable oil in a deep frying pan over medium-high heat.
  4. Dip each mussel into the batter and carefully place them in the hot oil.
