Ingredients

  • wild greens (such as dandelion, chicory, or beet greens) – 1 pound / 450 g
  • potatoes – 2 large / 400 g
  • onion – 1 medium / 150 g
  • garlic – 2 cloves
  • olive oil – 3 tablespoons / 45 ml
  • lemon juice – 2 tablespoons / 30 ml
  • salt – 1 teaspoon / 5 g
  • black pepper – 1/2 teaspoon / 2 g

Instructions

  1. Wash the wild greens thoroughly and chop them coarsely.
  2. Peel and dice the potatoes into small, equal-sized pieces.
  3. Finely chop the onion and mince the garlic.
  4. In a large pot over medium heat, warm the olive oil.
  5. Add the onion and garlic, sauté until translucent and fragrant.
  6. Add the potatoes, stirring occasionally, until they begin to soften (about 7-10 minutes).
  7. Add the greens and continue to cook until wilted and tender.
  8. Season with lemon juice, salt, and pepper, adjusting to taste.
  9. Serve warm with a drizzle of extra virgin olive oil if desired.
