Ingredients
- olive oil – 2 tbsp / 30 ml
- onion – 1 large, diced / 150 g
- green bell pepper – 1 large, diced / 120 g
- tomatoes – 4 medium, diced / 500 g
- eggs – 4 large
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2.5 g
- red pepper flakes – 1/2 tsp / 2.5 g
- fresh parsley – for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and sauté until translucent, about 5 minutes.
- Stir in green bell pepper and cook for another 3 minutes.
- Add diced tomatoes and cook until they are softened, about 5 to 7 minutes.
- In a bowl, whisk the eggs with salt and black pepper.
- Pour the eggs into the skillet, and gently stir them into the vegetable mixture.
- Continue to cook, gently stirring, until the eggs are softly scrambled, about 3 to 4 minutes.
- Remove from heat and sprinkle with red pepper flakes and fresh parsley.
- Serve warm with crusty bread.
